MANDEL BREAD 
4 eggs or egg substitute
1 c. cooking oil
1 c. sugar
4 tsp. vanilla extract
6 tsp. almond extract
1 c. finely chopped almonds (or pecans)
4 c. all purpose flour
2 tsp. baking powder
1/8 tsp. salt

Before you begin, measure out and reserve 2 cups from the 4 cups of flour needed. Into the 2 remaining cups of flour add the baking powder and salt. Mix eggs, oil, sugar, vanilla and almond extracts together. Add nuts and the 2 cups of flour with the baking powder and salt. Mix well. Begin adding the reserved 2 cups of flour until dough is a stiff consistency to form into 4 sausage links. Place links on greased cookie sheet. Bake in 375 degree oven until links feel firm but not fully baked. About 20 to 30 minutes. Remove from oven and slice links into 3/4" to 1" pieces. On a piece of parchment paper or brown paper mix 4 teaspoons of cinnamon and 4 teaspoons of sugar. Roll warm sliced pieces in this mixture coating well and return pieces to the cookie sheet. Place back in oven and bake about 15 minutes until they look brown. When cool, store in tin or ziplock bag. Keeps well for weeks.
