BARBECUED STEALHEAD 
6 to 8 lbs. fish
2 lemons
1/2 c. melted butter
2 tbsp. lemon pepper
Aluminum foil

Clean fish. Remove head, tail, and fins. Place side down on grill and cook 15 minutes each side. Remove from grill and take off skin. Lay fish on its back and pull back bone upwards. This removes bones and you end up with two boneless fillets.

Place each fillet on a sheet of aluminum foil. Place lemon wedges on fillets. Cover with 1/4 cup melted butter on each fillet. Sprinkle 1 tablespoon lemon pepper on each. Roll up in foil and place back on grill for 15 minutes. Damn, I get hungry just thinking about it.
