OYSTER AND ARTICHOKE SOUP | |
4 tbsp. butter 2-3 onions, chopped 3-4 tbsp. flour 3 celery stalks, chopped 1 bunch green onions, chopped 3 cloves garlic, minced 1 can artichoke hearts & liquid, halved 4 c. water, approx. 3 doz. oysters & liquid Salt & pepper to taste Melt the butter in a skillet and saute the onions until clear. Add flour and brown lightly. Add celery and cook until tender. Add green onions and garlic, cooking until tender. Slowly add 4 cups of water to the desired thickness and simmer 5 to 10 minutes. Add artichokes and liquid and simmer 15 minutes. Add oysters and liquid, simmering 10 minutes more. Salt and pepper to taste. Makes 4 to 6 servings. |
