CREAM OF OYSTER SOUP 
1 pt. oysters
1 qt. milk
1 level tbsp. butter
1 level tbsp. flour
Salt & pepper to taste
1/2 c. whipped cream

Chop the oysters, drain off the liquor and add to it an equal amount of water; heat slowly, skim well, then put in the chopped oysters and cook 3 minutes. Scald the milk, thicken with the butter and flour creamed together and add to the oysters with seasoning. Put in the cream the last moment before serving.
