EASY POTATO CASSEROLE 
4 baked potatoes
Monterey Jack cheese
Cheddar cheese
Bacon
Green pepper, chopped
Onions, chopped

Use leftover baked potatoes from night before. Slice thinly with jacket on. Spray 9 x 13 inch pan with Pam and make 1 layer of potatoes. Top potatoes with grated Cheddar and Monterey Jack cheeses. Sprinkle with crumbled bacon, green pepper, and onions. Cover with next layer of potatoes and top again with cheese, bacon, green pepper, and onion. Bake at 325 degrees for 25 minutes or until cheese has melted. You can make many variations.
