MARY RAFFERTY'S STUFFED CABBAGE 
Great with mashed potatoes. These get better as leftovers. We called these pigs in the blankets.

1 lb. ground beef
1 lb. hot pork sausage (I like Jimmy Dean)
1 can sauerkraut
1 cup minute rice
1 onion, chopped
1 tsp. salt and pepper
1 head cabbage
1 large can tomato sauce

I core the hard end of the cabbage and steam or boil it until tender. Then peel off the leaves and set aside.

Keep tomato sauce for later. Mix all the rest of the ingredients with your hands in a big bowl. Then put some on a leaf and tuck in the sides and roll up the edges. Do not use a toothpick. Its not necessary. Layer them in a nice sized pan. I like those old roasters. Bake in oven at 350°F uncovered for about an hour. Pour the tomato sauce over them and bake another 10 minutes.
