BAKED SWEET POTATOES | |
1 medium potato per person Choose plump potatoes without many roots and without cut places on it. Wash potatoes good and dry them. With your hands very lightly butter or oil the potatoes. Place aluminum foil in the bottom of your oven, place potatoes directly on the rack and bake at 300°F until tender. As the potatoes get close to done they will drip juice on the aluminum foil. To test for doneness lightly squeeze the potato with an oven mitt. If it is done it will yield easily to a gentle squeeze. Remove from oven and let cool several minutes before you try to peel them. Cut the end off of the potato and the skin should just slip off. Serve plain or with butter. They keep well in the refrigerator or can be frozen with the peel still on them. |
