QUICK SPOON BREAD 
2 eggs
3/4 c. cornmeal
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. buttermilk

Preheat oven to 400 degrees. Beat eggs. Stir in remaining ingredients. Pour into hot one quart dish with 1 tablespoon butter melted in it. Bake 20-25 minutes.
