BENEATH THE SEA SALAD 
1 (6 1/2 oz.) can white tuna, drained
1 c. carrot, grated
1/2 c. celery, diced
2 tbsp. grated onion (optional)
1 c. mayonnaise
1 (1 1/2 oz.) can shoestring potatoes, or 1 c. chow mein noodles
Lettuce

In a medium bowl, mix tuna, carrots, celery, onion and mayonnaise together. Chill in refrigerator for 1 hour. Just before serving, stir in shoestring potatoes or chow mein noodles. Serve on top of lettuce.
