SPAGHETTI SQUASH MEAL 
4 c. cooked spaghetti squash
1 pkg. frozen spinach, thawed, squeezed dry
1 lg. onion, chopped
2 cloves garlic, minced
2 sm. cans mushrooms, drained or 1 lb. fresh mushrooms
2 c. zucchini, shredded & blotted dry
1 (16 oz.) container ricotta cheese
2 eggs
Basil & oregano
1 1/3 c. spaghetti sauce

Mix everything except spaghetti sauce together and pour into large greased casserole dish. Bake at 350 degrees for about 45 minutes until set. Remove from oven, pour on the sauce and bake an additional 10 to 15 minutes.
