SPINACH PESTO PASTA SALAD 
1 lb. rotelle
1/2 c. mayonnaise
2 tbsp. olive oil
1 bunch spinach
4 cloves garlic
1/2 c. olive oil
Salt and pepper to taste
1 red bell pepper, diced for garnish

Cook rotelle according to package instructions, drain. Cool and set aside. Mix mayonnaise and 2 tablespoons olive oil together. Combine with pasta and mix well.

For Pesto: Clean and trim spinach. Place spinach, garlic and salt and pepper in a food processor. Gradually add oil through feed tube and blend until mixture is consistency of thin mayonnaise. Mix pesto with pasta mixture. Add bell pepper. Chill and serve. Makes 10.
