BAKED LAMB SHANK 
4 lamb shanks
Salt and fresh ground pepper
2 cloves garlic, crushed
2 sm. carrots, sliced thin
1 lg. onion, sliced thin
2 stalks celery, sliced thin
2 bay leaves
1 tsp. oregano
1/2 tsp. thyme
1 c. tomato sauce
1 c. water
1/2 c. olive oil
8 new potatoes, peeled

Preheat oven to 375 degrees. Sprinkle lamb with salt and pepper and rub with garlic. Sprinkle bottom of roasting pan with carrots, onion, celery, and bay leaves. Add lamb and season with oregano and thyme, add tomatoes with water and oil. Cover tightly and bake 2 - 2 1/2 hours. During last hour of cooking, raise temperature to 400 degrees. Uncover the pan and add potatoes; keep uncovered and baste potatoes often. Serves 4.
