ZUCCHINI DROP COOKIES 
1 c. grated zucchini
1 tsp. baking soda
3/4 c. honey
1/2 c. butter
1 egg, beaten
2 c. whole wheat flour
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. chopped nuts
1 c. raisins
1/2 c. coconut

Beat together zucchini pulp, soda, honey, and butter. Add eggs and beat well. Sift together flour, cinnamon, cloves, nutmeg, and salt. Add flour mixture with nuts, raisins, and coconut to egg mixture. Drop by teaspoon onto greased baking sheet. Bake 12-15 minutes at 375 degrees. Makes 7 1/2 dozen.
