SHRIMP SALAD | |
2 lbs. chopped, cooked med. shrimp 3 lbs. Iceberg lettuce (about 2 heads) 2 1/2 c. mayonnaise 4 1/2 oz. lettuce 1 1/2 to 2 tsp. seasoned salt Lemon wedges, parsley, and potato chips Mix shrimp, lettuce, mayonnaise, and seasoned salt together. For the individual salad, arrange at one end of a medium sized platter 2 or 3 whole lettuce leaves. Onto the lettuce leaves, put about 4 1/2 ounces bite sized lettuce, a generous helping (6 ounces) of the shrimp mixture and top with 1 whole shrimp. Garnish with 2 lemon wedges and parsley. Add a handful of potato chips at one end. |
