SAUERKRAUT SALAD 
1 lb. sauerkraut, drained but not rinsed
1 c. celery, chopped fine
1/2 c. green peppers, chopped
2 tbsp. onions, chopped fine
1/2 tsp. salt & pepper
3/4 c. white sugar
1/3 c. salad oil
1/3 c. cider vinegar

Mix chopped vegetables with sauerkraut. Heat vinegar and add sugar on low heat until sugar is dissolved. Cool and pour over vegetables. Chill salad overnight. Also delicious with country style sausage.
