HENRIETTA'S PICKLES | |
16 lbs. whole cucumbers (about 1 peck) Ice cream salt 1 box of alum 10 lbs. sugar 1 box pickling spice Vinegar Make salt water strong enough to flat a fresh egg. Soak cucumbers whole in the salt water for 8 days. Use an earthenware or glass container. (Don't use metal.) Then wash cucumbers. Cut in strips. Then soak overnight (24 hours) in a box of alum in water. Pour off and soak overnight in vinegar. Drain off vinegar (throw away vinegar). Put cucumbers in 10 pounds sugar and pickling spice in layers until all sugar is melted. Put in jars and let sit for a few days. (Jar lids do not seal.) |
