CARROT CHEDDAR COOKIES 
1 1/2 c. quick or old fashioned oats
1 c. shredded Cheddar cheese
1 c. shredded carrots
3/4 c. flour
2/3 c. butter
1/2 c. raisins or dates
1/3 c. brown sugar
1 egg
1 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. baking soda
1/8 tsp. cloves

Combine all ingredients; mix well. Drop by spoonful onto ungreased cookie sheet; flatten slightly. Bake at 375 degrees for 16 to 18 minutes or until golden brown.

Makes about 2 dozen.
