CARROT COOKIES 
1 c. mashed carrots (4 or 5 carrots)
3/4 c. sugar
1/2 tsp. salt
2 tsp. baking powdered
1 c. shortening
1 tsp. vanilla
1 tsp. lemon juice
2 1/2 c. flour

Mix and bake at 400 degrees. (These are spooned onto cookie sheet about half dollar size.) To frost cookies mix juice and rind from one orange. Then mix in enough powdered sugar for a frosting consistency. Frost cookies while they are still warm.
