CHEDDAR ME SOUP | |
1 tbsp. butter 1 tbsp. flour 1 c. chicken broth 1 c. half and half 1 c. cheese (sharp Cheddar), shredded 1 c. diced, cooked potatoes 1/3 c. beer 2 tbsp. chopped scallions Salt and pepper to taste Melt butter in medium saucepan over medium heat. Gradually add flour. Stir until thick in consistency. Add chicken broth and bring to a boil, stirring constantly. Add half and half, cheese, potatoes and beer. Simmer over low heat for 15 minutes. Add salt and pepper to taste. Garnish with scallions. Serves two. |
