RHUBARB CAKE (UPSIDE DOWN CAKE) 
6 c. chopped rhubarb
2 c. miniature marshmallows
1 1/2 c. sugar

Arrange rhubarb in bottom of 9x13 inch greased pan. Spread marshmallows and sugar over rhubarb.

CAKE MIX:

3/4 c. shortening or butter
1 1/2 c. sugar
3 beaten eggs
2 1/2 c. plus 2 tbsp. flour
3/8 tsp. salt
4 1/2 tsp. baking powder
3/4 c. milk

Cream butter and sugar, then add eggs and beat thoroughly. Add sifted dry ingredients alternately with milk. Pour over rhubarb in pan. Bake 1 hour in 350 degree oven, cool 5 minutes. Loosen edge and turn onto cookie sheet. Great with whipped cream!
