ROSY RED UPSIDE DOWN CAKE 
3 c. chopped rhubarb
12 lg. marshmallows, quartered
2 tbsp. butter
2 c. sugar
1/4 c. Red Hots
1/4 c. butter
2 beaten eggs
1/4 c. milk
1 1/2 c. flour
1/4 tsp. salt
3 tsp. baking powder

Arrange rhubarb, marshmallows, 1 cup sugar, Red Hots in bottom of greased baking pan. Sprinkle 2 teaspoons butter on top. Thoroughly cream 1/4 cup butter, 1 cup sugar and beaten eggs. Beat well. Add sifted dry ingredients alternately with 1/4 cup milk. Pour batter on rhubarb. Bake at 325 degrees for 1 hour. Cool before turning on slate.
