2 c. all-purpose flour 1/2 c. packed brown sugar 2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 c. chopped, pitted dates 1 beaten egg 1 c. dairy sour cream 1/2 c. milk 4 tbsp. butter, melted 2 tsp. instant coffee powder In mixing bowl, thoroughly stir together the flour, brown sugar, baking powder, baking soda and salt. Combine egg, the sour cream, milk, melted butter and coffee powder. Stir to dissolve coffee powder. Add liquid ingredients, all at once, to dry ingredients, stirring just to moisten. Fold in chopped dates. Fill greased muffin tins 2/3 full with batter. Bake in 400 degree oven for 20 to 25 minutes. Makes 12 large muffins. |
