CALIFORNIA COLESLAW 
1 c. shredded cabbage
1 c. shredded red cabbage
1/2 c. shredded carrot
1/2 c. chopped green pepper
1/2 c. chopped sweet red pepper
1/4 c. chopped onion
1 tbsp. & 1 1/2 tsp. minced fresh parsley
1/4 c. vinegar
1/4 c. low-cal Italian dressing
1 1/2 tsp. liquid sugar substitute
1/8 tsp. salt & pepper

Developed for diabetics or if on low-fat, low-cholesterol diet or if you just like to eat health.

Combine all vegetables in large bowl, stirring well. Set aside, combine all other ingredients in jar, cover tightly and shake vigorously. Pour over vegetables and toss lightly to coat well. Cover and refrigerate until thoroughly chilled. Stir before serving, use slotted spoon to serve with.
