MICROWAVE SOUTHERN BISCUIT
MUFFINS
 
2 1/2 c. flour
1/4 c. sugar
1 1/2 tbsp. baking powder
3/4 c. butter
1 c. cold milk
1/2 tsp. cinnamon

Combine flour, sugar and baking powder. Cut butter into flour mixture until resembles coarse crumbs. Add milk, mix until moistened. Line micro-safe muffin pan with double muffin cups. Fill 2/3 full. Sprinkle with cinnamon. Microwave at high 3 to 4 minutes. Serve immediately.

Since microwave ovens vary in power, you may need to adjust your cooking time.
