ZUCCHINI VEGETABLE DISH 
1/4 c. diced onion
6 c. diced zucchini
1 pkg. chicken flavored Stove Top dressing
1/4 c. butter
1 can cream of chicken soup
1 c. shredded carrot
1 c. sour cream

Saute in butter (1 tbsp.) onion and zucchini until tender. Prepare stuffing in 1/4 cup butter. Spread 1/4 of stuffing on bottom of 2 (9 inch) casserole pans. Add zucchini/onion mixture. Top with the rest of the stuffing mixture and a mixture of 1 can cream of chicken soup, 1 cup shredded carrot and 1 cup sour cream. Bake 1 hour uncovered at 350 degrees.
