KENYAN SWEET POTATOES 
2 lbs. sweet potatoes
1 1/2 tbsp. brown sugar
1 tsp. ground cardamom
8 oz. canned coconut milk

Peel and quarter sweet potatoes. Combine brown sugar, cardamom, and coconut milk. Add sweet potatoes. Cook 20-25 minutes or until potatoes are tender and all liquid is absorbed.
