BUTTERMILK BREAD 
1 pkg. yeast
1/4 cup warm water (110 to 115°F)
2 cups warmed buttermilk
1/4 cup sugar
1 1/2 tsp. salt
3/4 tsp. baking soda
6 cups sifted flour*, divided
1/4 cup (1/2 stick) butter, melted

Note: May use half white bread flour + half whole wheat flour (or oatbread flour or any combination).

Soften yeast in warm water. Mix buttermilk, sugar, salt and baking soda in bowl. Add yeast.

Add 3 cups flour and beat until smooth. Stir in melted butter. Add remaining 3 cups flour until light dough forms. Knead 5 to 8 minutes until smooth and elastic.

Place in greased bowl; cover. Put in warm place to rise until double in bulk (1 to 1 1/2 hours).

Punch down; divide in half. Shape into loaves. Let rise until doubled.

Bake at 400°F for 30 to 35 minutes.
