BUTTERMILK CORN BREAD 
2 eggs
1/4 c. sugar
1 c. flour, sifted
2/3 c. cornmeal
2 tsp. baking powder
1/4 tsp. baking soda
3/4 tsp. salt
1 c. buttermilk
1/4 c. butter (1/2 stick), melted

Preheat oven to 400 degrees. Grease an 8"x8" or 9"x9" square pan. Beat eggs in a large bowl. Add sugar and mix well. Sift together flour, cornmeal, powder, soda and salt. Add dry ingredients alternately with buttermilk to egg and sugar mixture. Stir in melted butter and pour into prepared baking dish. Bake about 25 minutes. Serves 8 to 12.
