ZUCCHINI & CARROTS 
2 1/2 c. carrots, cut julienne, if desired
2 1/2 c. zucchini, cut julienne, if desired
2 tbsp. olive oil
1 clove garlic, crush & saute in olive oil
1 tbsp. fresh lemon juice
3 tbsp. dry white wine

Stir fry crushed garlic in olive oil. Add carrots and stir fry for 2 minutes. Add zucchini and fry for 3 minutes more. Add lemon juice and wine. Toss and serve immediately.

This recipe is especially wonderful if you grow your own zucchini and use 1 or 2 that are very young and tender. I often add a baby yellow crookneck squash also.
