CARROT AND ZUCCHINI BARS 
1 1/2 c. flour
3/4 c. packed brown sugar
1 tsp. baking powder
1/2 tsp. ground ginger
1/4 tsp. baking soda
2 slightly beaten eggs
1 1/2 c. shredded carrot
1 med. zucchini, shredded (1 c.)
1/2 c. raisins
1/2 c. chopped walnuts
1/2 c. cooking oil
1/4 c. honey
1 tsp. vanilla

In a large mixing bowl combine flour, brown sugar, baking powder, ginger and baking soda. In another large mixing bowl stir together eggs, carrot, zucchini, raisins, walnuts, oil, honey and vanilla. Add carrot mixture to flour mixture, stirring just until combined. Spread batter in an ungreased 13"x9"x2" baking pan. Bake in a 350 degree oven for about 25 minutes or until a toothpick inserted in the center comes out clean. Cool in wire rack.

Cut into bars. Makes 36 bars. (This can be frosted if desired.)
