PARTY HAM CASSEROLE 
4 oz. noodles
1 (10 1/2 oz.) can condensed cream of mushroom soup, undiluted
1/2 c. milk
1 tsp. instant minced onion
2 tsp. prepared mustard
1 c. sour cream
2 c. leftover cooked ham, cut in 1 inch slivers
1/4 c. packaged dry bread crumbs
1 1/2 tbsp. butter, melted
1 tbsp. grated Parmesan cheese

1. Preheat oven to 375 degrees. Grease 1 1/2 quart casserole.

2. In large kettle, bring water to boiling. Add noodles and return to boiling; boil 3 minutes. Drain and rinse with cold water.

3. Meanwhile, in small saucepan, combine soup and milk, stirring until smooth.

4. Add onion, mustard, and sour cream, stirring to combine well.

5. In prepared casserole, layer half the noodles, ham and sauce. Repeat.

6. Toss bread crumbs with butter; sprinkle over casserole. Top with cheese.

7. Bake, uncovered, for 25 to 30 minutes, or until golden brown. Makes 6 servings.

My family LOVES this recipe! I have been making it for literally decades. I adapt it a lot, and always double or quadruple it. The sauce is a little tangy, creamy, and delicious. Whenever we have a ham, they expect this casserole. No problem, because I love it, too. Add mushrooms, or peas, use cream of chicken, or even cream of asparagus or cream of potato soup. It's always good and the leftovers are wonderful, too.
