LIGHT OAT BRAN WHEAT BREAD | |
2 tbsp. sugar 1 pkg. active dry yeast 2 1/2 c. lukewarm water 1/2 c. honey 1 tsp. salt 2 1/2 tbsp. melted butter-flavor shortening OR 2 1/2 tbsp. melted butter 1/2 c. oat bran 2 c. whole wheat flour 4-5 c. unsifted flour Stir 2 tablespoons sugar and 1 package yeast into warm water (90-110 degrees). Let mixture sit 5-15 minutes. Add honey, salt, and shortening. Stir in oat bran, wheat flour, and unsifted flour cup by cup until too thick to stir. Then, work in by hand. Turn onto floured board. Add more flour if necessary, and knead at least 10 minutes or until smooth and elastic. Place in large bowl greased with butter flavor Pam, turning to grease top. Cover and let rise in warm place until doubled in size (about 1 1/2 hours). Gently divide into two equal portions. Mold into 2 loaves. Place into greased (again Pam may be used) pans. Brush entire top with butter or melted butter. Cover pans with light cloth and let rise until doubled in size. |
