WHOLE WHEAT HONEY BRAN BREAD
1 1/2 c. potato water
2/3 c. cooking oil
3/4 c. honey
1 1/2 tsp. salt
1 1/2 c. lukewarm water
2 cakes yeast
4 c. sifted white flour
4 c. whole-wheat flour
1 c. bran

Put 1 medium sized potato and water in which it has been cooked through a sieve into a large bowl. This should measure 1 1/2 cups. Add cooking oil, honey and salt to potato water. Cool to lukewarm and add the yeast which has been softened in the lukewarm water. Stir well to mix. Then stir in the flours and bran which have been combined. Mix well.

Knead until smooth and elastic. Place in a greased bowl. Cover and let rise until double in bulk. Punch down, turn over and let rise again. Mold into three loaves. Place in greased loaf pans and let rise again.

Bake in 350°F oven for 1 hour. Remove from pans at once and place on rack to cool.
