PUMPKIN PIE (MICROWAVE) 
1 (9") shell, baked
1 (16 oz.) can pumpkin
3/4 c. brown sugar, firmly packed
1 1/2 tsp. pumpkin pie spice
2 eggs
1 c. evaporated milk

Mix pumpkin, sugar and spice in large mixing bowl. Beat eggs and milk together. Mix with pumpkin mixture. Pour into baked pie shell. Bake for 18 to 20 minutes on medium heat or until knife inserted in center comes out clean.

Since microwave ovens vary in power, you may need to adjust your cooking time.
