SQUASH SOUFFLE 
2 c. cooked mashed squash
1 c. dry bread crumbs
1 c. milk
1 tbsp. chopped onion
Salt & pepper to taste
1 c. grated sharp cheese
2 eggs
3 tbsp. butter

Heat milk. Add butter. Pour over bread crumbs. Mix well. Add squash and seasonings. Beat eggs and add to mixture. Bake in baking dish. Bake at 350 degrees for 30 minutes.
