SQUASH SOUFFLE 
2 c. squash, cooked
3 tbsp. pimento, chopped (optional)
3 eggs, beaten
3 tbsp. butter, melted
2 tbsp. onion, cooked
1 c. cracker crumbs
1 c. cheese, grated
1 c. milk

Mix all ingredients. Bake at 400 degrees for 45 minutes. Serves 6.
