STIR-FRIED RICE 
6 slices bacon, cooked & crumbled
1 c. sliced celery
1 c. finely chopped green onion
2 eggs, beaten
3 c. cooked rice
1 can (4 oz.) sliced mushrooms, drained
1/3 c. chopped pimentos
1 tbsp. soy sauce (or more if desired)

Stir fry onion and celery in bacon drippings. Add eggs, scramble. Add rice, mushrooms, pimento, soy sauce. Toss lightly.

NOTE: Variations are endless. Try green or red pepper, thinly sliced carrots, peas, cubed ham or whatever your imagination will allow. Excellent leftover.
