VEGGIE AND RICE STIR FRY 
Lite soy sauce to taste
1/2 head red cabbage, grated or sliced
10-12 mushrooms, sliced
1/2 red onion, diced
1 zucchini, peeled and sliced
1 pat butter or butter
Lemon pepper to taste

OPTIONAL: Water chestnuts, snow peas, marsala cooking wine.

Saute all vegetables together in butter. If you have marsala cooking wine, add a little to taste. Add lite soy sauce and steam cook for about 7-10 minutes until zucchini is done. Pour over steamed rice with a little lite soy sauce.
