MILTON'S CARROT CAKE 
2 c. flour
2 c. sugar
1 tsp. salt
2 tsp. baking soda
2 tsp. cinnamon
1 1/2 c. oil or butter
4 eggs
3 c. grated raw carrots

Combine dry ingredients in a large bowl. Add oil or melted butter; beat well. Add eggs, one at a time, beating well after each. Stir in carrots. Bake in 3 round layers at 350 degrees for 35 minutes or until done. Fill and frost with the following filling.

FILLING:

1 (8 oz.) pkg. cream cheese
1/4 lb. melted butter
1 pkg. powdered sugar
2 tsp. vanilla
1/2 c. coconut, raisins, or nuts
