SOLE FLORENTINE 
1 1/2 lb. fillet of sole (can substitute catfish)
1/2 pkg. frozen spinach, cooked & drained
1 c. crushed Ritz crackers
1/2 c. grated cheddar cheese
1 egg
Pepper, onion powder, garlic powder to taste

Can use fresh mushrooms, onions as desired.

Wash and dry sole.

Mix florentine mix together.

Place about 1 tablespoon to 1 1/2 tablespoons florentine mix on sole. Roll and pin with toothpick.

Cook in lightly greased casserole dish at 400 degrees for 20 minutes.
