MEXICAN LASAGNA 
1 lb. hamburger
1/2 c. chopped celery
1/2 c. chopped onion
1/4 c. chopped green pepper
1 c. tomatoes, undrained & chopped
1 (10 oz.) can enchilada sauce
1/4 c. sliced olives
1 1/2 c. cottage cheese
1 1/2 c. American cheese
1 egg, beaten
1/2 c. oil
8 corn tortillas

Combine first 4 ingredients in skillet, brown and drain. Add tomatoes and next 2 ingredients. Bring to boil and simmer 15 minutes. Set aside. Cook tomatoes in oil. Layer cheese, meat and tortillas. Bake at 350 degrees for 30 minutes. Let stand 5 minutes.
