SWEDISH MEATBALLS 
1 lb. ground beef
1 c. dry bread crumbs
1 c. milk
1 onion, minced
Dash of nutmeg
Dash of pepper
Dash of parsley
3 tbsp. butter
1/2 lb. ground pork
1/2 lb. ground veal
2 eggs, beaten
1 tsp. salt
Flour and beef stock or brown gravy seasoning

Blend meats, crumbs, and milk. Saute onion in 1 tablespoon butter. Add meat with eggs and seasonings. Mix with hands to get even texture. Roll into small balls. Brown in 2 tablespoons butter. Remove meatballs, allowing to drain on paper towels.

To make gravy, add flour and stock (and/or gravy seasoning mix) to pan juices.
