HAM OR CRAB MEAT SOUFFLE | |
9 slices sandwich loaf bread (1-2 days old) 2-3 c. lean ground ham or 2 cans crab meat 8 oz. grated sharp cheese 5 eggs 2 1/2 c. milk 1/2 tsp. salt 1/2 tsp. dry mustard 1/4 tsp. onion powder Lightly spread bread with butter and cut in quarters. Place about half of the bread in a 9 x 12 inch dish. Be sure the bottom of the pan is covered with bread. Sprinkle bread with ground ham or crab, then half of the grated cheese. Cover with the remaining bread squares, sprinkle the remaining cheese over the bread. Lightly beat 5 eggs with dry mustard, salt and onion powder. Add milk. Pour over layers in pan. Be sure top layer is moist. Cover with plastic wrap and place in refrigerator overnight. Let stand 1 hour before baking. Bake at 325 degrees for 1 hour. Dilute cream of mushroom soup with half & half and put a 1- 2 tablespoons on top of each serving. Serves 6-8. |
