BOSTON BAKED BEANS | |
1 lb. sm. California Pea beans 1/2 tsp. baking soda Water to cover beans 1/2 lb. salt pork, washed and cubed 1 lg. onion, diced 1/3 c. dark molasses 1/2 c. dark brown sugar 1 tsp. salt 1 tsp. dry mustard 1/4 tsp. paprika 1/4 tsp. ground cloves 1/4 tsp. black pepper 1/2 tsp. chili powder Blanch beans for 10 minutes in boiling water. Wash beans and sort. Soak overnight in cold water. In morning, rinse. Add water. Bring to a boil for 20 minutes. Remove from burner, add soda. Let stand for 1 minute. Drain. Rinse again in cold water. Put pork and onion in bottom of bean pot. Combine the molasses, brown sugar, salt, mustard, paprika, pepper and chili powder in a cup of hot water. Add to bean pot. Add beans. Cover with hot water. Bake 4-6 hours. Add hot water, if necessary. Uncover last hour to brown. Beans should be tender, not mushy. |
