POTATO CASSEROLE 
2 lb. bag frozen hash browns
1 c. diced onion
1 can cream of chicken soup
1 pt. sour cream
1 stick butter, melted
8 oz. sharp grated Cheddar cheese
Salt and pepper
Crushed potato chips

Combine and mix well all ingredients, except potato chips. Top with potato chips. Bake 1 hour at 350 degrees in a 9 x 13 inch pan. Can be made a day ahead.
