1 lb. butter 1 1/2 c. sugar 4 eggs 2 tbsp. baking powder 4 c. flour Fruit jam Confectioners' sugar Mix first 5 ingredients together well. Amount of flour may be adjusted according to stickiness of dough. Dough should not be too sticky. Place dough in refrigerator for 1/2 hour. It will roll out easier. Roll out dough. Cut into rounds with cookie cutter. For each tart you will be making a top and bottom. The bottom are the plain rounds. For the tops you can use a thimble to make a hole in the middle of the round. Bake in cookie sheets in a 325 degree oven for about 10 minutes. They should be very lightly browned, don't let them become overdone. When done place your favorite jam on the plain round then top with a round with the hole in the middle. Sprinkle confectioners' sugar over top of each tart. |
