STIR FRIED BEEF & BROCCOLI
1 lb. round steak, cut crosswise into thin slices
1/2 half cup water, divided
1/3 c. soy sauce
2 tbsp. packed brown sugar (or less)
3 tbsp. sherry
1 clove crushed garlic
1 tsp. ginger
1 tsp. cornstarch
1 bunch broccoli, cut into florets (about 4 c.)
1 lg. onion, cut into wedges
3 tbsp. oil (for frying)

Marinate sliced steak in mixture of 1/4 cup water, the soy sauce, sugar, sherry, garlic, ginger and cornstarch. After marinating, drain steak well, reserving marinade. Heat oil in skillet or wok. Add steak slices and stir fry over high heat until browned. Remove steak from skillet and set aside.

Add broccoli and onion to hot skillet; stir fry 1 minute then add remaining 1/4 cup water. Cover and steam broccoli-onion mixture until broccoli is crisp-tender. Return meat and reserved marinade to skillet with broccoli. Heat through. Serve over rice. Approximately 4 to 6 servings.
