SWEET POTATO PIE | |
2 c. cooked, mashed sweet potato 1 c. sugar 1/2 c. butter, softened 2 eggs 1/2 c. evaporated milk 1 deep dish unbaked pie shell 1 tsp. ginger 1 tsp. cinnamon 1 tsp. nutmeg 1/4 tsp. salt Combine sweet potatoes, sugar, butter, eggs, spices and salt in a large mixing bowl; beat until light and fluffy. Add evaporated milk; mix just until combined. Pour into pie shell. Bake at 400 degrees for 10 minutes; reduce heat to 350 degrees and bake 45 to 50 minutes or until set. Cool. Top with whipped topping if desired. |
