SWEET POTATO PIE 
2 slightly beaten eggs
1 1/2 c. cooked, mashed sweet potatoes
1 c. sugar
1/2 tsp. salt
1 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. cloves
1/4 tsp. nutmeg
1 2/3 c. evaporated milk
9" single crust unbaked pie shell

Combine eggs, sweet potatoes, sugar, salt and spices. Gradually add evaporated milk. Mix well. Pour into unbaked pie shell. Bake in hot oven (425 degrees) 15 minutes; reduce to moderate (350 degrees) and continue baking about 40 minutes, or until knife inserted near center of pie comes out clean. Cool before serving. Garnish as desired.

Pumpkin Pie: Omit sweet potatoes in above recipe. Add 1 1/2 cups canned pumpkin. Prepare as above.
