PEANUT BUTTER MUFFINS 
1 1/4 c. flour
1/3 c. sugar
1 tbsp. baking powder
1/2 tsp. salt
2 c. whole bran cereal, corn flakes, or whole wheat flakes
1 1/4 c. skim milk
1/2 c. creamy or chunky peanut butter
1 egg, slightly beaten
1/2 c. raisins

Preheat oven to 400 degrees. In a small bowl, combine flour, sugar, baking powder, and salt; mix well.

In a medium bowl, combine cereal and milk; let stand 1 to 2 minutes or until cereal is softened. Add peanut butter and egg; mix well. Add raisins and flour mixture; stir just until mixed.

In 12 greased miniature muffin cups (2 1/2 x 1 1/4 inches), spoon batter; muffin cups will be nearly full. Sprinkle cinnamon and sugar on top. Bake for 25-30 minutes or until golden brown. Immediately remove muffins from pan. Cool on wire rack or serve warm. Makes 12.
